Cross Rib Roast Recipe Smoker

If you are a fan of pulled pork but want something more special for your weekend dinner, a cross rib roast recipe smoker is a great option. Not only is it delicious, it's also surprisingly easy to make. The key to making this meal a success is in the preparation and marinade.

You'll need a cut of beef roast that is between three and four pounds, preferably one that has been trimmed of fat. For the marinade, mix together two tablespoons of Worcestershire sauce, four garlic cloves (crushed), one tablespoon of Italian seasoning, a teaspoon of salt, and a tablespoon of freshly ground black pepper. Place the roast in a shallow dish, pour the marinade over the top, and cover with plastic wrap. Allow it to sit for at least 8 hours in the refrigerator, turning it every few hours.

When it's time to cook, prepare your smoker for slow roasting. Remove the roast from the marinade, patting it dry with paper towels, and place it on the rack inside the smoker. Then, cover the smoker with its lid and let the low heat of the smoker do its work. The cooking time should be between 2 and 3 1/2 hours, depending on the size of the roast. Be sure to check the internal temperature of the roast regularly, and remove it from the smoker when the temperature reaches 160 degrees Fahrenheit. Cover the roast with foil and allow it to rest for 15-20 minutes before slicing.

Once ready, serve the cross rib roast with sides of roasted vegetables, mashed potatoes, and your favorite BBQ sauce or gravy. It's sure to be a hit with family and friends!
